Who Tarted? (limited release)
Our brewers love a good IPA and also appreciate the finer qualities of a delicate sour ale. We decided to combine the best of both. Who Tarted? has the characteristics of an IPA with just the right amount of tartness in the finish. A generous dry hop is evident in the aromas while the tartness provides hints of fruit.

Blue Haze Mountain Wheat? (seasonal)
Summer in the High Country reminds us of the natural beauty of the mountains. The Blue Ridge Mountains are appropriately named and so is Blue Haze Mountain Wheat Ale. This delicate wheat ale finishes with a crisp hint of fresh blueberries. Enjoy while watching the sunset from your favorite parkway view.

Looking for the perfect beer to enjoy on the porch on a warm Summer day? Side Porch Pale Ale is a light, easy drinking beer featuring Huell Melon hops from the Hop Research Center in Bavaria. Huell Melon hops offer mild flavors of honeydew melon and ripe strawberries.

Farmhouse Basil (seasonal)
A traditional Saison brewed with German Pilsen Malt and Belgian Saison yeast. We made an extract using five pounds of fresh basil that we added to the beer after fermentation. A slight tartness is balanced by a hint of basil in the nose and finish. Very refreshing Summer beer.

Crisp and refreshing with notes of fresh grapefruit and pineapple, this IPA finishes dry with a pleasant lingering fruitiness. Palate Painter is part of the Northern Peaks Trail Craft Beer Series. The Northern Peaks Trail Craft Beer Series is a partnership among High Country breweries to educate and inspire our community towards the creation of North Carolina’s newest state trail, located right in here in the High Country: The Northern Peaks Trail (NPT).
Style: Mosaic IPA
Our take on this Trappist style ale uses local honey and has a rich, malty nose with just a touch of caramel. Dubbel Major is malt forward in flavor with hints of banana, cloves, and a little spice in the finish. This beer is a collaboration with our friends at Ivory Tower and the App State Fermentation Sciences program. Sometimes one major is not enough.

Dank Vader Black IPA (limited release)
If you find yourself drawn to the dark side of this black liquid, don’t let your eyes deceive you. Dank Vader drinks like a fresh, hop forward IPA with a hint of roasted malt in the finish. Lupulin…I am your father.

Hatchet Coffee Porter (limited release)
Porter brewed with molasses, milk sugar and coffee from our friends at Hatchet Coffee. Guatemalan San Luis El Volcancito Modelo beans are delicately roasted, cold brewed and blended to create a rich and creamy brew.

This is the perfect beer to cool down with after a long day of hitting the trails in search of adventure. 3150 Ale is an easy drinking light ale inspired by an American craft beer pioneer we admire. A hint of malt flavor is followed by a clean and crisp dry finish. The name? 3150’ is the elevation of our brewery.

An American pale ale, dry hopped with massive amounts of Australian Galaxy hops. Mango, orange and papaya flavors are front and center in this easy drinking ale. Boone Winters often leave us day dreaming about warm tropical air. Try one and enjoy a taste of the tropics.

An American style IPA with complex citrus/tropical flavors and aroma. Firm but not overpowering hop bitterness is balanced by a solid base of English and German malts. Our IPA delivers big hop aromas you can only enjoy by drinking the freshest possible beer.

Mandarina IPA (seasonal)
Notes of tangerine and orange peel are highlighted in this seasonal IPA. Each sip begins with orange and caramel flavors and finishes slightly dry. This beer is named after the sought after Mandarina Bavaria hops from which the orange flavors originate. No fruit was harmed in the making of this beer.
Style: American IPA
Photographers go out of their way to capture outdoor images during the golden hour, which occurs when the sun is near the horizon, resulting in more indirect lighting and vivid colors. Our Golden Hour IPA is a full flavored and refreshing take on the double IPA style. A blend of seven different hops adds complexity to this smooth drinking beer. A nod to the beautiful scenery of the High Country and the many talented photographers who capture it.

Elk Knob Amber Ale
Climbing one of the many peaks in the high country is always rewarding, especially during the Fall sea-son. Elk Knob Amber Ale is a medium body amber ale with a crisp caramel sweetness, along with just a hint of dark raisins and biscuit from the malted barley. This red-hued amber ale embodies Carolina in the Fall.
Style: Amber Ale
Notes of chocolate and caramel can be found in this porter. We brew this beer with molasses to provide a slight sweetness, hints of burnt sugar and a nice smooth finish. Perfect for cool mountain evenings. Pairs well with smoked meats and cheeses.

The Professor (seasonal)
Our favorite professors in the ASU Fermentation Sciences department are the inspiration for this oatmeal stout. The dark rich color and notes of roasted coffee are balanced by its silky body and creamy mouth feel. Drink one in honor of your favorite professor. At 5.1%, your professor won’t mind.

Bitter Faculty (special release)
Bitter Faculty is a collaboration brew with our friends at Ivory Tower Inc., a 501(c)(3) non-profit supporting research and education in fermentation sciences. This beer is an envelope pushing IPA, with tons of hop character from essential oils distilled in house, balanced by a solid malt profile. Bitter Faculty is a big honkin’ double IPA, dedicated to all those professors out there who are currently dealing with tough economic times, difficult legislatures, challenging administrators, entitled students and endless assessments. It’s no wonder some of them can be so bitter. Proceeds from this beer go to support Ivory Tower Inc. and the App State Fermentation Sciences department.

Old Orchard Creek (special release)
This is a refreshing wheat beer brewed with 180 lbs. of fresh local blueberries from Old Orchard Creek Blueberry Farm in Lansing, NC. A beautiful ruby colored beer with notes of berries in the nose, a bright acidic tartness up front and a dry finish balanced with a hint of sea salt will keep you coming back for another sip. Booneshine is donating 10% of keg sales from this beer to Blue Ridge Conservancy.

Sencha Saison (seasonal)
Belgian Farmhouse Ale brewed with fresh ginger and finished with whole leaf Japanese Sencha green tea. This crisp dry Saison features hints of ginger spice, subtle green tea earthiness, and a slight tartness from the yeast. On a warm Spring day, this refreshing Saison will make you forget about the long Winter.

Dubbel Secret Probation Ale – Ivory Tower (special release)
Our Friends at Ivory Tower Brewery and the ASU Fermentation Sciences department developed the recipe for this unique Belgian Style Ale. Dubbel Secret has just the right amount of Belgian yeast character and the hop profile of a west coast American IPA. Proceeds from this beer support Ivory Tower Brewery and ASU Fermentation Sciences.

Brookie Brown (seasonal)
The American Brown Ale style is more malty and hoppy than a traditional English Brown Ale. Our take on the American Brown Ale includes generous amounts of cascade, centennial and northern brewer hops. Chocolate and caramel malts provide a nice balance and finish to the beer.

Freestone Session IPA (seasonal)
Our local freestone streams and rivers provide great opportunities for fly fishing, kayaking and tubing and this is the perfect beer to enjoy on the river or after a full day on the water. Low gravity and full IPA flavor makes this beer totally “sessionable”. Generously dry hopped with Citra, Centennial and Simcoe hops!

High Country Honey (seasonal)
Summertime in the High Country is made for being outdoors and enjoying mountain life. High Country Honey is an easy drinking amber ale brewed with local NC honey and honey malt. A slight honey/caramel sweetness is balanced by a crisp refreshing finish.

Long Winter Mocha Stout (seasonal)
High Country Winters are perfect for a rich, dark yet smooth Imperial Stout. Our Mocha Stout is brewed with generous amounts of dark chocolate and cacao nibs. Natural process Ethiopian coffee roasted and cold brewed by our friends at Hatchet Coffee provides a subtle coffee flavor in the nose and finish.
